# How To Make It:

01 - Combine diced mango, diced peaches, lime juice, and honey or agave syrup in a blender. Blend until the mixture is completely smooth.
02 - Strain the blended fruit puree through a fine mesh sieve into a large pitcher to remove any pulp, if a smoother texture is desired.
03 - Add the cooled black tea to the pitcher and stir thoroughly to combine the fruit puree with tea.
04 - Pour chilled sparkling water into the mixture and mix gently to maintain effervescence.
05 - Fill glasses with ice cubes and pour the mango-peach tea over the ice.
06 - Garnish each glass with fresh mint leaves and slices of peach and mango. Serve immediately.

# Expert Hints:

01 -
  • You get the thrill of a homemade bubbly drink that's so easy you'll wonder why you ever bought bottled teas.
  • The combination of mango and peach tastes extra special because it's always juicier and brighter when you blend it fresh.
02 -
  • If you don't chill the tea and sparkling water first, the ice will melt quickly and dilute the drink.
  • Straining the fruit puree seemed unnecessary until I ended up with a drink that was more like a smoothie—now, I always strain for clarity.
03 -
  • Never skip chilling the tea—the difference in flavor and feel is dramatic.
  • For gatherings, blend extra fruit and save some for garnish, so each glass gets both a fruity infusion and a snack.
